Soupe de poisson

Every trip to Provence I try to have a bowl of soupe de poisson. This is the base of Bouillabaisse and is wonderful in it's own right. It is quite fishy, which is wonderfully set off by the croutons of baguettes past, with a garlic rouille and a bit of parmesan and, of course, a nice glass of Rose.
